Salmon side smoked in Engadine air according to Finnish tradition: The salmon side is attached to a beechwood board and prepared over the fire every Thursday evening before the Uondas. On pre-order, we also smoke a whole salmon side (approx. 1,000 - 1,200 grams) for you on other days. The salmon smoked on the Uondas terrace is only offered in the main season. In the off-season, we are happy to prepare a whole salmon side for you on pre-order.
